PART 1: Hot Brewing - Life Through Tea: Mastering the Art of Gongfu Tea

Hot Brew Method

For a more delightful flavor, use a porcelain, clay, or Yixing teapot.

  1. Warm your teapot and cups with boiling water.
  2. Tea to water ratio: 1:50. This ratio is a bit strong and allows for 7-8 steeps, but adjust to your taste.

Steeping Instructions:

  • First brew: Steep for about 50 seconds, then pour out the tea.
  • Second brew: Steep for about 40 seconds.
  • Third brew: Steep for about 50 seconds.
  • For each additional brew, increase the steeping time by 20 seconds.

You can re-steep the leaves more than 10 times, depending on your taste. Keep the water temperature between 95-100°C. Using boiling water helps to bring out the aroma and flavor of the high mountain tea. Enjoy!

Tip: Use slightly acidic water, with mineral water being the best option. For the highest quality, use water with a pH of 6.5.
